Puis passez au chinois (Le chinois est une passoire conique très utilisée en cuisine). Et vous voilà en possession d’environ 1.5 litre de fond de veau brun.</span><br /><span>Dans la plupart des utilisations il est comme on dit « liè » cela veut dire qu’il a une consistance nappante et non liquide, aussi nous allons maintenant le lier.</span></p></div>

				<div class="et_pb_text_inner"><p style="text-align: justify;"><span>Faites fondre 60 g de beurre dans une casserole, quand il est fondu, ajoutez 60 g de farine, puis à l’aide d’un fouet et sur feu doux, vous faîtes cuire doucement jusqu’à ce que ce « roux » (hé oui, ça s’appelle un roux) prenne une couleur brun clair. Puis vous versez votre fond de veau sur le roux en fouettant pour éviter les grumeaux, vous faîtes cuire une dizaine de minutes et vous débarrassez dans un récipient inoxydable pour qu’il refroidisse.<br />Vous disposez maintenant d’un <strong>fond de veau lié</strong>. Un litre et demi, cela fait beaucoup et moi, pour ne pas en perdre et pour toujours en avoir sous la main, je remplis des sacs à glaçons quand il est presque froid et je le mets au congélateur.<br />Simplement pratique !<br /></span></p></div>
